Alice’s Restaurant: A Labor of Love

Located just west of Downtown Pensacola, Alice’s weaves together the freshest ingredients, the most classic and innovative recipes, the most inviting of interiors, and the most hospitable staff for an unforgettable experience. Alice Guy, owner of Alice’s Restaurant, is no stranger to the culinary and dining industry. Her parents were both entrepreneurs who instilled in her the principles that you must “work hard and smart, be honest, and earn your paycheck.” After surviving Breast Cancer in 2017, Alice decided to move back to Pensacola to be close to her significant other, Frank Patti. Alice brought her talents to Joe Patti’s Seafood by reopening and managing Anna’s Fine Wines, one of the premier sources of fine wines of the Pensacola area. Alice also opened and managed the famed A’mangiari deli and Sushi Bar inside Joe Patti’s. After these successes, it was natural for Alice to branch out and open her Restaurant where her skill and vision could come together.
Alice’s Restaurant’s cuisine combines the fresh seafood and inspirations of the Gulf Coast with classics that most patrons know and love. A Florida native, Chef Pardue, the Executive Chef of Alice’s, grew up fishing, cooking, and gardening along the coast. His favorite dishes are considered Deep South Gulf Coast Cuisine. Chef Pardue takes pride in finding the freshest ingredients, with meals featuring local produce and meat. One of the perks of creating dishes for Alice’s is that Joe Patti’s is just a few blocks away for the freshest selection of seafood. Most recently, Chef Pardue has served at the AAA Four Diamond Henderson Beach Resort and Spa and the AAA Four Diamond Award-winning Seager’s Steak House, located in the Sandestin Hilton Resort.
One of the unique features of Alice’s Restaurant is that the 8,800 square feet venue has two distinct dining areas and corresponding menus. The two white cloth dining rooms and a private dining room present a more sophisticated, fine dining atmosphere. In these areas of the Restaurant, diners can enjoy such offerings as steak, veal, lamb, sea bass, and grouper. The most talked-about dish is the Table Side Caeser, which is prepared fresh at the dining table by a trained server. In the same vein, Alice’s is adding a table-side prepared Bananas Foster and Cherries Jubilee, created by the talented and experienced Donald Webb. The wine bar is the more relaxed area of the Restaurant, offering selections such as Po’boys, cauliflower crust pizzas, charcuterie, and raw oysters when in season. Craftsman Clyde Baver has created an innovative craft cocktail menu. Behind the bar can also be found a huge selection of single malt scotches, single barrel bourbons, as well as a vast wine selection. The bar crafters at The Wine Bar at Alice’s are committed to serving the customers the best drinks and the best experiences. In the works for Alice’s is a third area called the Wine Cellar. Designer Karen Jasper and Craftsman Rod Kelly have collaborated with Alice to create a temperature-controlled space (set at 60 degrees) designed to keep wine at an optimal temperature. Diners can browse this cozy space decorated with shelves filled with cookbooks, books on wine, decanters, and, of course, wine bottles.
With the rise of Covid19, Alice’s is also committed to keeping both its customers and staff safe. All staff has been trained and updated about protocols set by state and health departments that cover food prep and service. Alice’s Restaurant is dedicated to excellence in both service and safety.
