Wine Pairing at Costello’s Butcher Shop & Deli

One of Christie’s go-to bottles and a personal favorite of mine is Round Pond Estate’s Kith & Kin Cabernet Sauvignon. It is a very approachable wine that offers ripe notes of dark berries, plum, and black cherries with an underlying smokiness of oak, spice, and cedar. The wine also retains some old-world characteristics with its natural balance of fine-grained tannins and moderate acidity. Kith & Kin cabernet is also a good segue for those looking to venture into Bordeaux blends, which Costello’s has in the portfolio as well.
For those special occasion evenings that call for A5 Japanese Wagyu beef, I suggest upping the ante and springing for a bottle of PlumpJack Cabernet Sauvignon. This cabernet is one of California’s best wines coming out of the heart of Napa Valley, specifically Oakville. This wine is a rich and deeply concentrated cabernet that exudes aromas of blackberry, fig, black currant, and dark plum with PlumpJack’s signature hints of mint and sage undertones. On the palate, the wine shines with robust and well-integrated tannins combined with balanced acidity leading to a lengthy finish of fruit and spice. The combination of a rich, robust Wagyu cut and the big, full-bodied PlumpJack cabernet will make for a memorable night.
If reds aren’t your thing, Costello’s offers a myriad of white wines as well as rosé and sparkling wines to suit your palate. Santa Margherita Pinot Grigio is a delightful white wine from Italy that exhibits fresh, citrus fruit aromas of lemon and lime. The palate is light and refreshing with a mouth-watering finish making it a perfect summertime sipper and an excellent wine for perhaps a picnic in the park. Costello’s also offers an array of sparkling and fizzy beverages, of which I am a big fan of the Charles de Fere Blanc de Blancs Brut. A beautiful brut champagne from France, Charles de Fere offers aromas of fresh fruit ranging from golden apple to yellow pear to apricot with subtle hints of honey. The fine bubbles in this champagne awaken the taste bud with clean, crisp acidity and smooth, fruity finish.
In addition to wine, Costello’s also offers stellar selections of beer, sake, and various other libations. One of the more popular items is the Cipriani Bellini, which, as the name implies, is a ready-to-serve combination of prosecco and white peach juice. Just chill, pop, and enjoy!
