Tacos Are Just the Shell of Their Business
Located independently from the food court at the Tanger Outlets, P.S. Taco Company brings something imaginative and exciting to the small town of Foley, AL. The vision for fusing authentic, Latino-style creations with a dash of southern influence stems from the collaboration of two families with dreams of growing in and giving back to their community.
Headed by Russell Perkins and Paul Smith, P.S. Taco marries west coast, vibrant colors with the freshest and healthiest ingredients available. Along with a good friend and seasoned culinary expert, Russell and Paul purposefully crafted the look and feel of each dish. From visual presentation to how the food feels in the customer’s hands is as equally important as the taste and promise of only the best ingredients. P.S. Taco’s exceptional menu is built in such a way that everyone leaves after a satisfying experience.
Russell and Paul spent years working in and learning about the restaurant industry. Given their cumulative professional experience, they knew they wanted to create their own franchise. Russell and his wife, Tiffany, are also franchisees of Rock N’ Roll Sushi in Foley. After their first restaurant saw such great success and the opportunity to open another restaurant came their way, Russell knew it was the chance to bring his and Paul’s concept to life.
“We are locally owned and locally operated, and we are a ‘fresh restaurant’ that wants to not only be local but support the local community as much as we possibly can. Because that’s where we become not beneficial in a sense to us but beneficial to the community. We help out with the local schools, we help out with any other type of events or charities in the area, and that is something Tiffany and I, along with our partners are very passionate about. Not only running a great restaurant but being involved in the community and being a good influence,” says Russell about their mission for building a positive brand and community image.

The families have taken part in several wildly successful community fundraisers, and expect to do much more in the future. “It was overwhelming with how much support we received from the community,” Russell said of the fundraiser they contributed to for the family of Officer Sean Tuder.
Their journey began with combining their names to create the logo, then deciding how to portray the personality of the restaurant, and ultimately building the menu from scratch. After that, Russell, Tiffany, Paul, and his wife, Stephanie, focused on driving brand success in a small, growing town that provided them with much-needed support; a community in which they could give back.
P.S. Taco brings recipe inspiration from all over the world to serve delicious tacos in a new capacity. Their best-sellers are on a new level of expertise in taste, presentation, and distinction specifically tailored to represent the brand. P.S. Taco Fries, fries topped with pickled onions, diced pineapple, and mango salsa among a few things, are a sweet and spicy favorite appetizer for guests. The Blackjack Tacos feature Korean style marinated beef, blue cheese, pineapple mango salsa, and P.S. Taco’s own pickled jalapenos, topped with cilantro lime aioli. Their best finisher on the menu? Key lime pie made in-house of course! With ingredients purchased as local as possible from vendors like Gabby’s Tortilla Co. in Orange Beach, and Billy’s Bacon, the P.S. Taco crew ensures fresh food and originality in every dish.
“Taco” is just the shell of the business, behind which are two passionate families wanting to bring a new level of service to their community, through the success of their restaurant, their hearts, and their devotion to giving back to others.
