Eurasian Bistro
Paul Nguyen had a vision of creating a restaurant that offered a unique fusion of the vibrant traditional Vietnamese cuisine he grew up with combined with a melange of the many Eurasian flavors he had encountered and experienced while growing up, living, and traveling that very diverse part of the world. His journey from Saigon to Pensacola was a long and complicated one, beginning with escaping Vietnam with his family by boat in 1977, then living in a refugee camp in Indonesia before making the journey to the United States and settling in Houston. Nguyen built a career with Microsoft, working in the technical side of the oil and gas industry. Over the years, he also worked in the aerospace industry on space shuttle telemetry processing systems. In 2013, he retired from the corporate world and relocated soon afterward to Pensacola. After trying out retirement, he decided to embrace a new challenge – Eurasian Bistro. His mission is to bring awareness of unique Vietnamese cuisine to this part of the globe and to provide an experience that delights guests with a friendly ambience and consistently good food that is authentic but also embraces the French and Asian cultures. He has since added a second location in Downtown Pensacola.
Nguyen’s goal for the Eurasian Bistro was – and is – to bring awareness of the unique Vietnamese cuisine to the masses. His vision all along has been to produce an experience that delights the patrons with consistently good food that is authentic but has adapted to embrace the influences from French cuisine that permeates Vietnamese cooking and creates harmonious Eastern flavor blends. In summary, Eurasian Bistro presents a charming mix of tradition and modernism, full of authenticity and tradition, but always about the food and the flavors.
The house specialty at Eurasian Bistro is undoubtedly Pho, the wholesome, delectable, comforting soup that is at the heart of Vietnam cuisine. The classic pho preparation includes a flavorful, rich, long-simmered broth, either beef or chicken, with thin slices of beef or chicken along with generous heaps of aromatic herbs and vegetables. The Eurasian Bistro menu features more than half a dozen variations of Pho, using chicken broth as well as beef broth with any number of combinations of noodles, meat, and vegetables. The menu goes far beyond Pho, however, with intriguing appetizers that include egg rolls, spring rolls, and miniature pancakes served with vegetables, herbs, and a spicy sweet fish sauce for dipping. The menu even includes several intriguing desserts, including a Vietnamese banana cake, creme caramel, and a fried banana topped with ice cream and drizzled with caramel. In addition, the menu highlights several vegetarian dishes, specialty drinks, a variety of freshly brewed teas, and a number of sake drinks.
Owner Paul Nguyen and his staff are devoted to providing the best Eurasian dining experience imaginable. Sometimes, the experience is enhanced by the in-house robots who provide unprecedented food service, both delivery and cleaning up.
