Watermelon Ginger Aperol Spritz
The Watermelon Ginger Aperol Spritz is a light, refreshing summer cocktail made for sipping over ice on hot summertime days!
1 pound roughly chopped seedless watermelon plus more for garnish
1 (5-inch) piece fresh ginger peeled and finely chopped
3 ounces chilled Prosecco
2 ounces Aperol
2 ounces fresh watermelon juice
1 splash ginger juice (optional)
For the watermelon juice: Place watermelon cubes in a food processor and process until smooth. Pass through a fine mesh sieve and discard solids. TIP: Juice can be made up to 1 day ahead – store refrigerated in an airtight container until ready to use.
For the ginger juice: Place ginger pieces in a food processor or blender and add 3/4 cup of water. Process until smooth then pass through a fine mesh sieve and discard solids. TIP: Juice can be made up to 1 day ahead – store refrigerated in an airtight container until ready to use.
For the Spritz: Place a few ice cubes in a wine glass, add the Prosecco or another Brut sparkling wine, the Aperol and watermelon juice then top with a splash of the ginger juice, garnish with a slice of watermelon, and serve.
