Mediterranean Caprese Tortellini Salad
The Backyard Bohemian’s Mediterranean Caprese Tortellini Pasta Salad is tossed in raw garlic, olive oil, fresh herbs, and mozzarella balls, and ripe summer tomatoes. It is the perfect dish for a warm summer day!
1 lb Tortellini
1/2 cup olive oil
1.5 lb cherry, grape, or heirloom tomatoes (halved)
3 cloves garlic
1/2 cup fresh basil, chopped
1 tsp red pepper flakes
1 1/2 tsp salt
1/2 tsp oregano
1 – 8 oz package of BelGioioso Fresh Mozzarella Pearls
- Bring a large pot of water to a boil. When water begins to boil, add tortellini and cook until al dente.
- While tortellini is still boiling, combine oil, garlic, basil, tomatoes, pepper flakes, salt, and oregano in a medium bowl. Stir to combine.
- When tortellini is al dente, drain, and spray with cold water. Continue to spray until the tortellini is cool. Combine cooled tortellini with herbed olive oil mixture from step 2.
- Eat right away or store in the refrigerator. Salad reaches peak flavor when refrigerated overnight.
